Are these difficult to build? Either 3 or 4 loops would be fine. Any suggested schematics/layouts available?

Insomuch as a true-bypass switch is pretty much part of just about any DIY pedal build, it is hard to get any more basic a project than a loop selector box.  Indeed, it is the project I routinely recommend for beginners, because it requires a limited number of easy-to-get parts, requires very little debugging, and will continue to be useful for while.

A 3 or 4-loop selector is not any more complicated, from an electronic perspective, but you will have to be thoughtful about your choice of chassis, placement of switches, and the machining of holes for jacks.  You don't want there to be a conflict between the inside tip of the jack and the switch chassis, and you also want there to be a suitable spacing between switches so yo can hit the ones you want, and no others.
