When comparing the two schematics, which would be the better foot to go with?

There are a few cap and resistor differences, that's why I asked?

Top one has level control on input while on the lower it's on the output.
Top has a lower input impedance too as well as a fixed reduction of the input level even with the control at max.
Which one suits your guitar might well depend on it's pickups/impedance. I've not tried either so I can't help you decide.

why not go the whole hog's foot, and build it with both pots? I've even given you a name for it.

Ah so -  they're both bass boosters? Probably a bit like a DI into a Portastudio channel sound.
If your bass is active, the pot-first type might be best & the pot-last for passive.

Go with the second one, with the volume pot at the tail end. Uses one less resistor, theoretically should be quieter, and I've built it several times, works great... Also, if you really want volume control in front of the circuit For whatever reason, you can just use the one on your bass
