Regarding the above schematic, if I used 2n5089's instead of 88's will I have to adjust resistor values or will it still work fine except for higher gain

I could be wrong, but I thought the 2N5089 was just a lower noise version of the 2N5088.

The 2N5089 is the low noise version of a 2N5088. You can use a 2N5089 with no changes.

It is the higher-gain bin.

In sharp-pencil low-hiss design, a higher gain "can" give lower hiss, sometimes.

The gain bins have a huge overlap. '88: 300-900, '89: 400-1200.

Gain used to be VERY variable depending the day of the week and which way the wind was blowing. Motorola sold "types" that could be 30 to 400; and sort-outs of narrower ranges at higher prices. In that world, the hi-gain types cost more. The foundries have got very much better. I can imagine now they can hold the run to nearly all 700-900, and sell them as either type '88 or '89, whatever the customers say they want.
