i am looking at the datasheet of transistor or jfet etc...
where does it mention the gain (hfe)?

jfets and mosfets don't have Hfe.
they do not amplify currents.
they are voltage devices, like tubes.
transconductance and admittance are terms
used to describe the relationship of the voltage
on the gate to the resistance of the source/drain.
the Hfe, or "beta" of a transistor, is the relationship
of the base current to the collector current.
the "gain" of a mosfet or jfet has more to do with
the resistance placed in series with the source and
drain.  Look at all the J.Davidson circuits for a
good "how 2 do" on these devices.
