The value of the gain pot? My Great Cheddar runs out of gain a little before I would like it, can I increase the maximum gain by putting a bigger pot value in there? It seems like it should work...

not too familiar with the circuit - maybe.  If the gain is at max when the pot has highest resistance, this might work.  However, its likely that gain is max when pot is at minimum - 0 - resistance.  Then it wouldn't work.  You should try different transistors if that is the case.

Hi.  Reduce the 470 ohm resistor on the emitter of Q1.  Around 100 ohms should do it.  Yould could also increase the collector resistor from 10k to 22k or even 33k.  However, the 33k/100 ohm combination with a high hFE transistor like a 2N5089 or MPSA18 would probably be too much, so take things a step at a time.
