why don't you see more usage of trimmer capacitors since changing the values of input caps and such makes big differences in the sound?  maybe people are using them, but they don't usually end up on schematics or people's final circuits after testing?

Yes, the values are much too small to notice a difference as input and output caps.
There are some that range from 12pf - 180pf that might work (make a notable
difference) in feedback loop clipping circuits where a small value cap is used to
remove highs from the distortion. Could be fun to tweak whenever you felt like
it without removing any components. (thru an access hole or something)
Then again......
