I know I could just make two of these to have stereo, But I would like to put it in one enclosure. Any suggestions how this could be done with one unit ?

Lets' see..they say..you want the input impedance to be 10x or better of the output impedance...running two would halve the input impedance... I go look also at the LGMkII
  http://www.runoffgroove.com/littlegem.html
And see 1m5 to ground at the input so half of that is 750k, and say your pickups are 7k5 = 100 to 1
{Please excuse if my math is incorrect, my using your question for fodder to test it} I trying to test if I've learned this..
Perhaps the left side of this:
  http://www.runoffgroove.com/splitter-blend.html
the voltage divider, input, OA buffers and the red and green outputs
  AMZ shows many buffer alternatives
Anyway I thought I'd put the links up and see what someone who's tried these things more chime in.
