The TC Electronic Classic XII Phaser Pedal has a notch/peak function switch

What does this notch / peak function switch do?

Quite probably it inverts the feedback signal or inverts the overall phase-shift signal at the point where it gets mixed with the nonphase-shifted signal.  IN the one setting the phase shifted portion will produce notches.  IN the other it gets added to the dry signal to produce peaks.

That is my guess.

Do u mean "Not mixing with the dry signal" just only the phase wet signal? will give u just notches

No.  I mean that when you mix the dry/clean and phase-shifted signals together in-phase, you get a different sound than when you mix them together out of phase.  Phase-shifted only without clean will produce vibrato.
