My uC has 10 bit a/d. I only want to use 8 bits (to write to 125k x 8 sram).  How would this affect audio?

It depends on your uC. I'll assume you are using a 8-bit uC. There will probably be a settings where you can left or right adjust the reading from the A/D registers so you just have to read the adjusted register.

As for how this will affect the audio it depends on what you are doing with the audio. If you want to process audio signal it will drop the quality but to be honest I wouldn't use a 8-bit uC (keeping with the previous assumption) for audio. Besides the low quality, even at 10-bit, the uC will not have enough processing power to do much.
