It calls for an 11v Zener, but would a 12v Zener work as well?
Smallbear has a 12v but not an 11v.

12v would be fine.  However, if you only use it with a 9v power supply, you can use any appropriate diode there for polarity protection (1N4148, 1N914, etc)
