the STAB pot on the ZVex Fuzz Factory

It seems like this control is similar to the Beavis Audio "voltage sag" mod for the BYOC Fuzz Face project.  However, the Beavis mod calls for a 10K pot, which the STAB control on the Zvex FF is 5k.  Would using a 5k pot provide greater depth or control over the amount of voltage sag since its covering a smaller range?

More resistance = more voltage/current limiting.
depends on the circuit as to which works better.

No- using a 5k instead of a 10k would just give you less "voltage sag".  The Fuzz Factory probably only uses a 5k because after that it probably becomes unusable; it's already pretty unstable with a 5k pot.  Some circuits I've used higher than a 10K pot and still had effect the whole pot travel.  As John said, the optimum value on a "sag" control varies from circuit to circuit.
