I absolutely love the idea of this thing but I was just wondering if somebody could fill me in on the theory behind it, by the looks of the schematic its just a feedback loop yeah?

I think the Stab control is just reducing the supply voltage in order to change the bias of the transistor.

The stab control does reduce the supply voltage, but it also allows feedback. Normally, no signal can pass through the 9V power line because the impedance of the voltage source is very close to 0, shunting any AC to ground. But the stab control adds a resistance in series with the power supply. This allows signal to pass through the power line, causing positive feedback, which in turn causes the oscillations that you can get with the stab control.
