does it matter what guage of wire you use?

Not really. As long as you can fit it in the board you're using, it should work fine.

#20, #22, and #24 are probably most common, but you can use anything that gets the signal from point A to point B. I prototype with #30 quite often because I have a lot of it around. It's a little too small to stand up to abuse though.

I'm using #24. I found it with teflon insulation and it's nice because it doesn't melt if you accidently touch the soldering iron to it. I used #26 with PVC insulation at first but this stuff looks more substantial to me.

But #26 is probably adequate electrically.
