If you don't know what you're doing don't mess with AC. it's deadly if not done properly (think about waht would happen if your strings were hooked up to a wall socket). Transformers need to be well isolated electrically (safety), and need to be positioned in such a way that they don't interfere with each other and any other circuit nearby (they have a rather powerful magnetic field that hums at 50-60Hz, and you *will* hear this through audio circuits). A good fuse at a correct value and other protection arrangements are due here. Oh, and they can get hot.
That said, what you need is a rectifier and filter section maybe even with a regulator. The exact circuit used depends largly on transformers used, required voltage, current drawn, filtering requirements, the circuit you're feeding, etc.

After almost killing myself when I shorted a PSU once, my advice would be not to mess with AC unless you're an experienced builder. Buy a wallwart with different voltage outputs, that'll supply all your DC needs.
