Well I think Morley wahs and volume pedals use LED/LDR combos (that's how they can claim to never need pot replacement). Many tremolo designs use them (4ms Tremulus Lune, Craig Anderton Trem, etc)...Also the McMeat, the Lovetone Metaball clone, uses integrated LED/LDRs...

but for these i would think you would need a hard-to-make piece of semi transparent fading plastic that gradually goes from light to dark...

What's an LDR? I assume the L is for light and the R is for resistor... is a CdS cell an LDR?
Check out Craig Anderton's Electronic Projects for Musicians book he is a pretty LDR-happy kinda fella. I am really happy with the phase shifter project on that as well as the state variable filter with envelope contol (it's the envelope control that uses the LDRs) I know that the digitech whammy uses LDR control, as well as real high-end volume pedals.
