you should get the Jaycar and the Altronics catalogues, those are the main 2.
But some stuff (like matched Germanium transistors for a fuzz) don't exist in Australia.
Other places:
Rockby in Melbourne, Wiltronics in Ballarat.
I buy stuff from the USA (AllElectronics, Electronic Goldmine, Digikey, Jameco, and of course Small Bear for specialist DIY FX stuff. Just be sure to get it mailed via US Post Office (or it might cost a fortune!)
I like Jaycar alot. I'm in the U.S. but still order from them sometimes.
Prices are very reasonable. They have alot of very cool kits. They even have aluminum enclosures and DPDT stompswitches (only $3.25 U.S.$!)
Check out their capacitor and resistor assortment packs - a great way to start your parts collecting.
