Would this circuit still work if I were to use 51K, 5.1K, and 20K instead of 56K, 5.6K, and 22K resistors respectively?  What would likely be the effect on sound if it does work?  I'm asking because that's what I have on hand at the moment and I'm wondering if I need to order these values.

Also, what direction are those upright diodes supposed to be facing?

Try using the resistors that you have. They are close enough to the specified values as to make no discernible difference.
There should be no noticeable effect to the sound.
The upright diodes are shown as grey circles which I conclude means that the banded (cathode ) end of the diode faces up. If the circle was black then the anode would face upwards.
Good luck with the build and please let us know how you go. Cheers.
