What would the 100R trimmer be for?
the 2k pot would be to raise or lower the voltage correct?
on the 2k pot pin  wiring.  lm317 pin 1 to pot lug 2 and ground to pot lug 1 Correct.
I'm working on making a desktop power supply
I want to mount this in a case so I could have 0 to 30 volt

100R trimmer is for ultra perfectionists..
(it acts on the reverse mode of 2k one)

You mau safely ignore it and substitute it & 120R resistor with a 220-240 Ω as far as you are OK with 2K trimmer minimum turn accuracy..

+1 agree, never bothered with it myself.

My bench top pedal supply is based on the LM317 and never had any such niceties. It doesn't miss it.
