hi guys,
I built his cab sim:

Just wondering whether it's possible to wire it for a balanced output? How do I wire it?

Also if I wanted the cab sim to be run off phantom power, how would I got about htis?

I don't know about the phantom powering, but I think balanced output will need one more op-amp or an audio transformer.

Some stuff that may interest you:

If I remember correctly there is also some info about phantom power on epanorama so surf around. :)

It's really easy to convert somethin/anything to balanced out, see the links above.
Phantom power can also be done, but you need to be careful to avoid any impact on the audio path.
Phantom power uses 48V through the signal lines, which is isolated from the audio circuit by opamps. I have no readily available suggestions for any math, but having a look at http://sound.westhost.com/project35.htm
should give you a very bright idea of what to do (compare fig 3 and 4)
