OK, I gave up on the pic based pluck detector. I tried doing it using the A/D and using the on chip comparator. Works but tracking and glitches are terrible. I just don't think the PIC is cutout for this sort of thing. Or maybe it is my code.

Take the output of the first XOR from figure 2, that's your pluck.
I imagine you could also use something like this:

LPF on the input, some gain, then into the tuned circuit, and finally into a comparator.
