I'm planning on building Mosfet booster, but I'd like to use it with bass as well. Will the .001 uF cap filter bass frequencies? If so, what value would you recommend?

Socket the cap...but that's just me.  IIRC I had to go pretty small on that [with guitar] to get much bass cut. Switching in another cap with an SPST  is an option for tuning it for use with guitar or bass.

one other thing,

Is this fairchild BS170 going to work? it has an internal diode across the S to D, can this diode replace the zener? or will I still need the zener?

as far as i know the zener does the job of that diode by stopping satic damage and it also prevents the mosfet being fried because to great a signal is sent to the gate. if it has the internal diode then the only thing the zener would od is protect against overvoltage
